The 1920s saw Macallan selling to Whisky Blenders as 'top dressing' for their blends, the rare remaining casks matured for longer giving a drier, less 'toffee' sweet taste.
The 1930s saw coal in short supply due to increasing industrial activity meaning Macallan reverted to drying the barley with peat. At the same time, sherry casks became scarce due to the Spanish Civil War resulting in a peatier, less spicy whisky.
The 1940s saw the onset of war which meant almost no casks were forthcoming from Spain and refilling casks was common practice. This, combined with the peat drying which was still occurring, meant the flavour remained less spicy and more peaty.
The 1950s saw Spanish sherry casks become available again after the Second World War. This sweetness, mixed with the hint of peat smoke, resulted in a rich and spicy Macallan as fine as we taste today. £700 - 1000
